Eating Well During American Diabetes Month
The theme for this year's American Diabetes month is Eat Well, America! and along that vein the American Diabetes Association celebrated the inaugural National Healthy Lunch Day on Nov. 17, by providing tips geared toward helping Americans prepare or buy healthier lunch options.
In honor of National Healthy Lunch Day, I asked our dietitian, Laura Hitt, to give us a recipe that's easy to make and tastes great. Laura, who is a graduate of the University of Northern Colorado for Dietetics and The Art Institute of Colorado for Culinary Arts, gave me one of her favorite recipes. It sounded so delicious I promptly went home to make it. I loved it and so did my husband!
Here you go:
TURKEY PUMPKIN CHILI
(Makes about 8, one-cup servings)
Ingredients:
2 Tbsp olive oil
1 small or ½ large onion, diced
2 cloves garlic, minced
1 bell pepper, any color, diced
1 pound lean ground turkey
1 can drained, rinsed garbanzo beans
1 can diced tomatoes
1 can pumpkin puree
2 cups chicken broth
1 Tbsp chili powder
1 Tbsp cumin
1 tsp oregano
1 tsp ground cinnamon
Dash of salt and pepper
Cooking Instructions
1. Heat a large pot on the stove to medium high heat and add olive oil. Add onion, garlic and bell pepper and sauté until onion is translucent, about 3-4 minutes. Add ground turkey and cook until no longer pink.
2. Add spices and remaining ingredients and stir to combine. Cover the pot and let simmer, stirring occasionally for 30 minutes.
3. Taste and adjust seasoning if needed before serving.
