Soup Recipe Wins in June Contest

Healthy and chock-full of vegetables, a tasty soup is the winner of the June recipe contest at the VacaValley Hospital café.

Pat Carter, a weekend in-patient case manager at VacaValley Hospital, submitted the “Healthy Veggie Soup” recipe to win the monthly contest. Her reward is a free meal at the café and she will see her soup featured on the café menu every Wednesday this month.

Kerry Harris, food services manager at VacaValley, noted that the recipe is very versatile in addition to being delicious.

“Pat doesn’t measure,” he quipped. “She just puts whatever amount she likes and goes with it.” That method doesn’t work in a hospital café setting so for the VacaValley version, Kerry said the staff used low-sodium broth, artichoke hearts, mushrooms, asparagus, canned tomatoes, bell veggie souppeppers, celery, spinach and kidney beans all seasoned with Trader Joe’s 21 Salute seasoning.

For those who want to try the recipe at home, however, he suggested they can “add some cooked chicken to the mix for a heavier soup.”
