When it comes to your café dining options, NorthBay Healthcare Nutrition Services wants to help you take a walk on the wild side.

Every Wednesday of the month, starting in February, the cafés at NorthBay Medical Center and NorthBay VacaValley Hospital will showcase a special recipe of the month. The idea is to encourage café visitors to try something different which is both nutritious and delicious.

Wild Wednesdays will feature a recipe of the month at NorthBay Medical Center and NorthBay VacaValley Hospital.The Wild Wednesdays effort will replace the monthly recipe contest that has been running at the VacaValley café for the past year.

The Wild Wednesday recipe of the month is Harvest Soup. Kerry Harris, VacaValley food services manager, said the vegan soup is "simple and direct" and fits perfectly with February's Heart Health Month theme. It will be on the menu every Wednesday in February.

Harvest Soup

  • 3 large onions, chopped
  • 4 large garlic coves, finely diced
  • 5 large carrots, chopped
  • 4 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1-1/2 pounds hard-shelled squash, peeled and cubed
  • 1 pound canned diced tomatoes
  • 2 large bell peppers, seeds removed
  • 12 oz. millet, toasted, washed and drained
  • 2 quarts vegetable stock


Spray a medium stock pot with enough cooking spray to cover the bottom and heat.

Sweat onions and garlic until they glisten. Add carrots, sweet potatoes and squash and continue to sweat for about 5 minutes. Add tomatoes, peppers, millet and stock and bring to a boil. Reduce heat and allow to simmer until vegetables are soft and millet is cooked. More stock may be added if soup is too thick. Garnish with fresh herbs or chopped vegetables and serve hot. (Yields 12 8-ounce portions)
